Ingredients:

  • Cumin Seeds (Zeera) 1 teaspoon
  • Cinnamon Stick (Dar Cheeni) 2 inch piece
  • Cloves (Laung) 5 whole pieces
  • Black Pepper (Kali Mirch) 10 corns
  • Whole Black Cardamom (Kali Elaichi) extract seeds
  • Nutmeg (Jaifal) 1/6 of the nut
  • Mace (Javitri) 2 whole pieces
  • Star Anise (Chakra Phul) 1 whole piece

Instructions

The problem with buying ready made Garam Masala is that it might contain up to 2 dozen ingredients making all your curries taste and smell the same. A better solution is to use a simpler version of Garam Masala with a lot fewer ingredients so that you get a simpler and cleaner taste and smell while still having the option to add more ingredients if you want to create some variations. Grinding whole ingredients to make fresh powder that can be used within a few days also gives you fresher taste and smell that cannot be matched by mass produced Garam Masala.

(1) For the simple version of Garam Masala use the first 5 ingredients. Put all the 5 ingredients in a coffee grinder and grind until it becomes fine powder

(2) For more aromatic version of Garam Masala use all the 8 ingredients. Put all the 8 ingredients in a coffee grinder and grind until it becomes fine powder
