Main Ingredients: Cubed chicken breasts, tomatoes, garlic, red pepper paste
Time Required: 45 minutes
Serves: 2-3

Ingredients:

  • 4-5 tomatoes, peeled and cut into small-medium size pieces
  • 2 cubed chicken breasts
  • 10 garlic cloves, left whole or cut in half if large
  • 1 tablespoon red pepper paste
  • 4 tablespoons oil
  • Thyme
  • Instructions:

    (1) In medium pot, mix oil and pepper paste over medium heat.

    (2) Add chicken and cook mixing 5-10 minutes until just white.

    (3) Add garlic and tomatoes, continue cooking over medium heat until chicken is done (approx. 15-20 minutes), stirring occasionally.

    (4) Stir in an extra large pinch of thyme.
