  • 1Kg Chicken Thigh Fillet, cut into bite-size pieces
  • 2 Teaspoons of fresh Ginger, finely chopped
  • 2 Teaspoons of fresh Garlic, finely chopped
  • 1 Teaspoon Red Chilli powder
  • 1 Teaspoon Salt
  • 3 Tablespoons Corn Starch
  • 1 Teaspoon whole Cumin Seeds (White Jeera)
  • 5-6 Garlic Pods, whole and peeled
  • 4-5 Curry Leaves, whole
  • 5 dried Red Chillies, whole
  • 3-4 fresh Green Chillies, cut into large pieces
  • 7-8 Bay Leaves (Curry Patta), whole
  • 3 Tablespoons of your favourite Chilli Garlic Sauce
  • 1 Egg


(1) Put the Chicken, half of chopped Ginger, half of chopped Garlic, Chilli powder, Salt, Egg and Corn Starch in a pot and mix well so that Chicken is fully marinated
(2) Put the marinated Chicken in boiling oil and deep-fry until crispy brown
(3) Remove the Chicken from oil and strain
(4) Put the remaining ingredients (except Chilli Garlic Sauce) on a pan and fry in oil until Garlic and Ginger are sautéed
(5) Add deep-fried Chicken and the Chilli Garlic Sauce to the pan and sauté on medium heat for a few more minutes
(6) Add a sprinkle of water towards the end to ensure that the Chicken is not too dry
(7) Serve with Naan bread or Rice
