Goat Curry for 30 Persons

Ingredients:

  • 4kg Goat Meat cut in small pieces
  • 7 medium size Onions, finely chopped
  • 7 medium size Garlic Bulbs, finely chopped
  • 300ml of Cooking Oil
  • 3 inch Ginger, finely chopped
  • 2 teaspoons Dhania (Coriander) seeds
  • 2 teaspoons Jeera (Cumin) seeds
  • 1 teaspoon Black Pepper whole
  • 4 inch Dalchini (Cinnamon) piece
  • 4 whole Kali Elaichi (Black Cardamom)
  • 16 whole Laung (Cloves)
  • 3.5kg Potatoes, pealed and cut into 1-inch pieces
  • 9 medium size Tomatoes, coarsely chopped
  • 8 teaspoons Salt
  • 4 teaspoons Red Chilli power
  • 1 teaspoon Haldi (Turmeric)
  • 2-3 branches of Hara Dhania (fresh Coriander)

Instructions

(1) Add all the Goat Meat, chopped Onions, chopped Garlic, Cooking Oil, Red Chilli powder, Salt, Turmeric and 2 cups of Water into a pressure cooker. Lock the pressure cooker and put on high heat. Once the pressure cooker starts to produce steam then cook for maximum 10 minutes. That should be enough to soften the meat. This step is important because when cooking meat and potatoes together in large quantities the potatoes over-cook and start breaking up before the meat is cooked.
(2) Put the remaining spices in a grinder and grind finely. This will be your own homemade Garam Malasa!
(3) Turn off the pressure cooker and transfer all the contents to a 16L pot. A wide pot is to be preferred over a narrow and tall pot.
(4) Add the Garam Malasa to the pot and cook on medium heat until oil separates from the spices. Keep on stirring gently occasionally so that the spices don’t burn.
(5) Add Potatoes, 3.5L Water and let simmer until potatoes are cooked.
(6) Garnish with chopped fresh Coriander before serving.
