Serves: 4-6

Ingredients:

  • 3-4 pounds (1.3-1.8 kg) chicken or larger cut up
  • 4-6 medium potatoes cut in halves
  • 2-3 cloves of garlic crushed
  • A sprig of fresh basil
  • 28 ounce can crushed tomatoes
  • 1 pound (454 grams) spaghetti
  • Salt and pepper to taste
  • Instructions:

    (1) Place the cut up chicken in a large roasting pan. Add the potatoes around the chicken. Pour the tomatoes over the chicken and potatoes. Add garlic, basil, salt and pepper. Seal with foil.

    (2) Bake at 140 celsius (285 fahrenheit) for 3 hours. Uncover last half hour.

    (3) Remove chicken and add prepared spaghetti to sauce.

    (4) To serve, mash halved potatoes on bottom of dish, place tossed spaghetti on to and mix.
